So, I am not a morning person. I can stay up until 1 or 2 in the morning with no complaints most nights but ask me to get up and moving before the sun rises & I’m just not a happy person. This desire to do nothing during the morning hours always keeps me on the look out for simple, healthy breakfast recipes that can preferably be made ahead. Which is exactly why I love these Baked Apple Cider Breakfast Bites. I can make up a batch over the weekend & my daughter can eat on them for the first few days of the week!
- 1 & 1/3 cups flour
- 1 cup rice krispies cereal, coarsely crushed
- 1 pouch (.74 ounces) spiced apple cider instant drink mix
- 1/2 cup + 2 tablespoons sugar, divided
- 3 teaspoons baking powder
- 1/4 cup butter, softened
- 1/2 cup milk
- 1 teaspoon ground cinnamon
- 1/4 cup butter, melted
Preheat your oven to 425 degrees. Heavily grease your mini muffin tin or line with baking cups.
In a large bowl, mix together the flour, crushed cereal, apple cider drink mix, 2 tablespoons sugar & the baking powder. Cut in the softened butter with a fork until it resembles coarse crumbs. Add the milk & stir until just moistened.
Mix the cinnamon and remaining 1/2 cup sugar in a small bowl.
Scoop the dough out into tablespoon size balls. Drop the balls into the 1/4 cup of melted butter being sure to coat. Transfer the balls to the cinnamon sugar mixture and toss to coat. Place in your prepared muffin tin.
Bake for 12-15 minutes or until edges are edges are golden. Let cool in pan for a couple of minutes then remove to a wire rack to cool completely.
