What’s on your back to school menu list? Do you find that when school starts, your menu changes? I know that mine does. Suddenly I am more prepared for weeknight dinners than I was during the summer, we are eating quicker and easier to make foods, and actually eating at a decent hour. All that being said, that means my recipes become easier and more filling….like this Creamy Homemade Mac and Cheese that I am going to share with you today.
I struggle to get my oldest to eat chicken. Grilled? No. Chicken fajitas? No. BBQ? No. Homemade Chicken Tenders? Maybe. If it isn’t from a restaurant, and extra crispy and friend, he’s not into it. So on night’s when we have chicken on the menu, he already comes to the table with the attitude that he isn’t going like it, but he eats it anyway. However, when we sat down to dinner last week, I told him I had tried a new type of seasoning in the chicken breading, and that I really wanted him to try it. Well, he ate two pieces. Willingly. I typically make pasta or rice to serve alongside it, knowing he will gobble those down. With a full pot of pasta sitting right next to the pan of chicken, he finished his first piece and didn’t even ask for seconds on the pasta. He asked for seconds on the chicken. Mom for the WIN! I’m going to share this with you, in hopes that even the pickiest of your eaters will gobble it down, too!

We are big football fans in our house. Every Saturday and Sunday we are faithfully watching our favorite teams while enjoying some great food. And now, with the big game right around the corner, we are prepping for having family and friends over to enjoy some food, fun, and football. I’m the kind of hostess who has no shame in asking my guests to bring a dish or dessert to share. I am just so excited to share some wonderful news with you all today! I am ready to get back into blogging after a huge break! I think my last post was in July where I shared some ideas for Family Costumes at Mickey’s Not So Scary Halloween Party. Are you going? And I have undergone a little bit of a lifestyle change. I have decided to quit my part time library job, and work my travel business full time! Yay! That means more blogging, more crafts and recipes for all of you, and more Disney travel tips! For my family, they think me working from home means more made from scratch cooking. Right.

As much as we love to hit up our local taco shop, some days it’s just easier to set up a taco bar at home. Do you cook with olive oil? I will say that the only time I use anything other than Extra Virgin Olive Oil is in our deep fryer to make homemade french fries. Otherwise, it is Extra Virgin Olive Oil all the time. I mainly use it because it’s a healthier alternative to butter and vegetable oil. Every once in a while, we have pasta as one of our main dishes for dinner. My husband isn’t a fan of red sauce, so the kids and I have pasta a lot on nights when he has meetings at church. However, I was at a loss for a dinner idea for this past week, so I adapted this recipe from Six Sisters Stuff and came up with this delicious Olive Oil Chicken and Asparagus Penne. With the cooler weather being here, it’s hard to start thinking of dishes to make indoors. This dish was very filling, lightly flavored, and would pair great with a gluten free pasta, or even a whole grain pasta as well. Since we only had normal penne on hand, that is what I went with. I hope you’ll enjoy this Olive Oil Chicken and Asparagus Penne, too!
