Asparagus is one of those vegetables that my kiddos love-and that surprises me! Not every child likes vegetables, let alone asparagus. We introduced it to them by prepping it on the grill over the summer months. Now that the weather is turning cooler, we are moving from grilled vegetables to oven roasted vegetables. All the flavors of fall just magically meld together in this amazing Zucchini Spice Cake. We are in the midst of our garden growing like crazy, and so zucchini is at the forefront of my baking lately! It’s not quite fall, but I am always ready for the flavors in this cake, no matter what time of year. My kitchen smelled DELISH, and I am sure yours will, too! Zucchini is one of those vegetables that I am utilizing in so many ways. My favorite way to use it is with some sugar, spice, and everything nice. Zucchini in baked goods is my favorite! It is almost officially “pumpkin spice” season. I am having to hold myself back from sprucing up the front porch and the rest of our home for fall! I keep telling myself it’s too soon…but some things may be making an appearance very soon! Pumpkin is showing up in my kitchen, though! I am so ready to stock the pantry with pumpkin for fall baking. I love the flavors of fall, almost more so than Christmas baking. That is where these Pumpkin Zucchini Muffins come in! I like to shred and freeze my zucchini so I have it on hand for baking. Avocados are my favorite ingredient for summer dishes. On burgers, in salads, topping fajitas, or alongside my favorite Coca-Cola™ beverage in a dip or salsa-give me avocado, and I am a happy girl! Mmmmmm…..a good, hearty soup is one of my favorite meals in the winter. Wrapping my hands around a warm, comforting bowl of soup makes me want to settle in for the night and just relax. And let’s get real….soup can be made in the crock pot, which is a huge bonus! No fuss, set it and let it cook all day is my mantra. If there isn’t at least one crock pot meal on our weekly menu, I need to sit down and rework it! This Creamy Potato Chowder is SO easy, and the best part is, the ingredients are in my pantry nearly all the time.
Stromboli is always on the menu in our house. It is like a wrapped up pizza with a pesto sauce type base. Cheesy, fun to dip in pizza sauce, comfort food. Oregano, garlic, cheese…..the aroma is AMAZING! And the best thing, is everyone in my family loves it. It’s a party food, easy dinner food, snack….basically, it’s perfect for every occasion. You can fill it with whatever you want, and it will quickly become very prominent in your monthly menu rotation.
Menu planning is something that is either met with cheers or groans, right? Some weeks, I feel SO motivated. Then others, I feel like I am in survival mode and I don’t think about dinner until 3PM, when I am on the way to pick up the kids from school. I often start the New Year with intentions of creating 52 weeks of menus. Notice, I didn’t say amazing and creative menus…..I just want to get out a menu every week! When it comes to menu planning, I am a pen and paper kind of girl. Well actually, it’s more like a marker and my chalkboard menu I created shortly after we moved into our new house. Regardless, it is handwritten and in the kitchen for everyone to see. This helps answer the “What are we having for dinner?” question before it is even asked. And if a couple of weeks go by and I haven’t changed it, then one of our kids gently reminds me that it hasn’t changed and truly asks with sincerity, “What are we having for dinner?” Today, I have rounded up ten great menu planning printables for you!
