If you have been a reader of My Favorite Finds long enough, you know that I have an obsession with the peanut butter and chocolate combination. Any chance I get to eat these two decadent flavors together, and I am a happy girl. But, as we all know, that isn’t always the healthiest option….I mean, I can’t just eat a bag of Reese’s Peanut Butter Cups and feel good about it. I can’t even eat just two or three of those little guys and feel good about it. But, I can eat Peanut Butter Chocolate Energy Bites and feel good about it! These Peanut Butter Chocolate Energy Bites satisfy my craving for my favorite combination, they have protein in them, and I don’t feel guilty after eating one…or two….I often have these in the freezer and/or refrigerator, and my whole family loves them!

Chocolate and Peanut Butter is my absolute favorite combination of all. I am a sweet tooth girl, and if there is chocolate and peanut butter in the same vicinity as each other, I can’t walk away. I even get a craving for it so badly sometimes, that you will find me standing in the kitchen with a spoon of peanut butter topped with chocolate chips. I am obsessed. I even have an entire Pinterest board dedicated to Peanut, Peanut Butter & Chocolate! Mmmmmm…..a good, hearty soup is one of my favorite meals in the winter. Wrapping my hands around a warm, comforting bowl of soup makes me want to settle in for the night and just relax. And let’s get real….soup can be made in the crock pot, which is a huge bonus! No fuss, set it and let it cook all day is my mantra. If there isn’t at least one crock pot meal on our weekly menu, I need to sit down and rework it! This Creamy Potato Chowder is SO easy, and the best part is, the ingredients are in my pantry nearly all the time.
Stromboli is always on the menu in our house. It is like a wrapped up pizza with a pesto sauce type base. Cheesy, fun to dip in pizza sauce, comfort food. Oregano, garlic, cheese…..the aroma is AMAZING! And the best thing, is everyone in my family loves it. It’s a party food, easy dinner food, snack….basically, it’s perfect for every occasion. You can fill it with whatever you want, and it will quickly become very prominent in your monthly menu rotation.
Menu planning is something that is either met with cheers or groans, right? Some weeks, I feel SO motivated. Then others, I feel like I am in survival mode and I don’t think about dinner until 3PM, when I am on the way to pick up the kids from school. I often start the New Year with intentions of creating 52 weeks of menus. Notice, I didn’t say amazing and creative menus…..I just want to get out a menu every week! I know that menu planning makes me a better mom, and I want to share that with you!

In my house, fall is synonymous with two things. First, football season and second it’s time to bake! Once the weather cools, it is time for relaxing Saturdays and Sundays, watching our favorite teams on TV…or if we are really lucky, in person. However, when we can’t get to the game in person, we do a little “home gating” and enjoy our favorite foods and fun right here in our living room. That being said, I also have three kiddos and a husband to feed during game time. So, we try to keep things fun, easy, and all about the team spirit around our house. While the coaches are sending in players, I am sending in Skittles® to add color and fun to our game time. That is where the Best Sugar Cookies Ever come into play!

What’s on your back to school menu list? Do you find that when school starts, your menu changes? I know that mine does. Back to school…..means back to menu planning, routine, and making sure things are running easy and smooth around the Hurst house. Truthfully, as much as I love summer, I am ready for the routine and consistency that going back to school brings to our house. It’s a calm sense of order, and I am a better mom when my sweeties spend the day at school. Since I do have two teenagers, who need more than an apple after school for a snack, I need to have some easy ingredients on hand to make something satisfying to hold them over until dinner.
