My mother in law made this for my husband when he was in college-it was always his favorite meal to come home to. We had it for our rehearsal dinner, as well. It feeds a lot of people, and satisfies the need for comfort food :).
*6 boneless, skinless chicken breasts cooked and cubed
*2 10 oz packages broccoli, prepared according to the package (I like the chopped broccoli, but the broccoli cuts work as well)
*1 8 oz package of shredded cheddar cheese
*2 cans cream of chicken soup
*1/2 c Miracle Whip (DO NOT substitute mayonnaise)
*1 box chicken stuffing
*In a buttered 9×13 dish, layer the broccoli on bottom. Arrange the chicken on top of the broccoli.
*Mix the soup and Miracle Whip in a bowl, and heat in the microwave for about a minute. (This will make it easier to spread).
*Spread the Miracle Whip and soup mixture over the chicken.
*Sprinkle the cheese on top.
*Fix stuffing according to the directions, and spread over the top of the cheese.
**Since my boys don’t care for their food to touch, such as in a casserole, I split the recipe between a 8×8 and a 9×9 pyrex dish. This makes two meals for Derrick and I.
**I often serve this with a salad. It makes for an easy weeknight meal if you prepare it beforehand.
