When I go to Applebee’s, my favorite meal to order is the Chicken Fajita Rollup. But, when I looked at the calories online, it’s so not good for me! So, I did a little recipe searching, tweaking, and here is what I came up with.
Chicken Fajita Roll Ups
8 flour tortillas, burrito size
1/2 c salsa
2 c cooked, cubed chicken and/or cooked taco meat
1 c shredded cheese
2 c chopped lettuce
*Preheat oven to 350. Cook chicken-I had cooked mine during a batch cooking day and had some in the freezer.
*Top tortillas with salsa, chicken, and some cheese.
*Fold in the opposite sides of the tortilla and roll up, tucking the opposite ends under like a burrito.
*Arrange burritos in a baking dish, seam side down. I used a 9×13, and I could fit all 8 burritos in it.
*Top with some cheese. Bake for about 15 minutes, or until the cheese is melted.
Note: These are VERY good rewarmed as leftovers and also freeze very well. Also, I made some with taco meat and cheese because that sounded good to the boys.
