Easy Pizza Pockets

Easy Pizza Pockets level up your summer and back to school routine. Back to school…..means back to menu planning, routine, and making sure things are running easy and smooth around the Hurst house. These Easy Pizza Pockets that I am going to share with you today serve that purpose….and can serve as a quick dinner or even something to add to their lunch boxes.

Truthfully, as much as I love summer, I am ready for the routine and consistency that going back to school brings to our house.  It’s a calm sense of order, and I am a better mom when my sweeties spend the day at school.  Since I do have two teenagers, who need more than an apple after school for a snack, I need to have some easy ingredients on hand to make something satisfying to hold them over until dinner.  Our family loves a good pizza….and my kids seem to really appreciate when I make them a hot lunch during the summer.  They are at the age where they can certainly cook some for themselves, but I don’t mind making them a decent lunch, either. Pizza is always a win for us! 

Easy Pizza Pockets

I created these easy pizza pockets with ingredients I always have on hand.  Not only are they a kid friendly lunch, but also make a good party food or something simple on a busy weeknight. 

Pizza Pocket Ingredients

  • Refrigerated or homemade pizza dough
  • Pepperoni
  • 5 pieces of mozzarella string cheese
  • Pizza sauce

How to Make Pizza Pockets

First, heat the oven to 450 degrees.  While it is warming, spray a baking sheet with nonstick cooking spray and roll out the pizza dough on it. Cut the pizza dough into 10 even rectangles.  Spread a thin layer of pizza sauce on each.

Next, add a layer of pepperoni.   I found that I could fit three pepperonis nicely on each rectangle. Unwrap the string cheese, and cut it lengthwise in half.  This makes it a bit thinner, and the dough wraps around them better. Lay a piece of string cheese on each rectangle.

Finally, wrap each rectangle into a pocket, tucking the ends under and laying it seam side down on the baking sheet.  Bake for 10-12 minutes, or until golden brown on the top.

These just take a few minutes, and you can easily customize them with your favorite toppings. 

I also whipped up a garlic butter sauce to top them with before baking.  I just melted two Tablespoons of butter, and added 1/2 teaspoon each of garlic powder and parsley.  This added a nice flavor, but I think they would taste great without it as well.  Serve them with a side of pizza or marinara sauce for dipping.

Serving these with a salad or some fresh veggies round it out nicely, and make me feel like my kids are eating good food for lunch :).  What do you like to make for your kids over the summer?
