As summer is right around the corner, this is one of my favorite recipes for church, family get togethers, and cookouts. I’d like to thank my sister for the photo-I didn’t have one, so she sent me one :).
1 tube refrigerated sugar cookie dough OR Sugar Cut Out Cookie Dough
8 oz soft cream cheese
1/2 c sugar
1/2 t vanilla
Various fruit-strawberries, mandarin oranges, kiwi, blueberries, raspberries, canned pineapple
Roll out cookie dough into a circle OR a rectangle-depending on what kind of baking sheet you use.
Bake the dough at 350 for about 10-12 minutes, or just until it is firm.
As the dough is cooling, gently loosen-BUT DON’T REMOVE IT-from the stone with a knife.
Combine the cream cheese, sugar, and vanilla until it’s creamy. Spread on the cooled crust. Top with fruit. I like to do patterns, and it works well if you put the larger fruit on first-like the strawberries, kiwi slices, and mandarin oranges. Then, fill in the empty spots with the blueberries and raspberries.
Glaze: 3/4 c reserved fruit juice, 1 T cornstarch, 1/4 c sugar
*Mix this together, and heat over medium heat until thickened. Pour over the fruit.
Cut with a pizza cutter into squares or triangles, just as you would a pizza.
This is an easy dish to make the night before a summer gathering or a picnic. Also, you could add apples or bananas right before serving.
