Head Start on Your Favorite Recipes with Easy Cucumber Chicken Salad

I am just so excited to share some wonderful news with you all today!  I am ready to get back into blogging after a huge break!  I think my last post was in July where I shared some ideas for Family Costumes at Mickey’s Not So Scary Halloween Party.  Are you going?   And I have undergone a little bit of a lifestyle change.  I have decided to quit my part time library job, and work my travel business full time!  Yay!  That means more blogging, more crafts and recipes for all of you, and more Disney travel tips!  For my family, they think me working from home means more made from scratch cooking.  Right.

Well, maybe, because if you’ve been around My Favorite Finds long enough, you know I am always looking for a fun meal or dessert to share with you, especially if it’s one of my favorite brands from #CollectiveBias!  Today, I am going to share with you my recipe for Easy Cucumber Chicken Salad.  I found some #newfromhormel Everyday Scratch Flame Seared Chicken Breast at my local Kroger and thought it would be a great start to my favorite chicken salad recipe.   Plus, I had a Hormel Everyday Scratch coupon and with coupons, I’m always willing to try something new!

When I work from home, it is so easy for me to do one of two things.  I either don’t eat lunch at all, or I eat something not so healthy.  Neither of which is good.  I’m thinking if I can get a head start on my favorite recipes, and keep some ready to go proteins in the fridge,  I should have no excuse for eating poorly.

Easy Cucumber Chicken Salad

Ingredients:

Hormel Everyday Scratch Flame Seared Chicken Breast

3 Tablespoons Plain Greek Yogurt {or more if you like your salad creamier}

1 1/2 cups grapes, sliced in half

1 small cucumber, finely chopped

1/2 cup celery, finely chopped

Salt, Lemon Pepper Seasoning, to taste

Dice the Hormel Everyday Scratch Flame Seared Chicken and place it in a large bowl. Add the remaining ingredients and stir well.  Chill in the refrigerator for about 30 minutes before serving.  Serve on lettuce or with crackers.

So easy, right?  And the great thing, is you can flavor it with as much spice as you want.  I think even a little garlic powder or season salt would be great, too!  Next to the flame seared chicken breast, I found some Hormel Philly Steak hot sandwich meat.  Since I had a coupon for that too, I picked up some for my husband.  He had it warmed up and in a tortilla in minutes for a quick lunch.  It would also be good over rice for a quick, “made from scratch” weeknight dinner.
