Avocados, cilantro, cumin….yea, all my favorite flavors pretty much! I love those flavors, and we eat Mexican food frequently in our house. Hence, making this Creamy Avocado Dip was a no brainer! I made it for the Fourth of July for our family get together-and it was gone before we even fired up the grill. Then, the hubby said, “When are you going to make some of that avocado stuff again?” I know when he requests something again that he liked it the first time! This is sooooo good! And it’s fairly healthy. Considering you’re using Greek yogurt in place of a sour cream is great. And, to keep it low calorie, serve it with pita chips or fresh vegetables. It’s even good spread inside wraps for sandwiches.
Ingredients:
1 avocado, skinned and chopped
1/2 cup plain Greek yogurt
1 clove of minced garlic
3 Tablespoons chopped cilantro
1 Tablespoon finely chopped jalapeno pepper, seeded
2 Tablespoons lime juice
1/4 teaspoon ground cumin
Directions:
In a food process or blender, combine all the ingredients until they are smooth. Serve with tortilla chips, pita chips, or fresh vegetables. It keeps in the refrigerator for a few days. It may appear brown on top, but if you give it a stir before serving, it gets green again :).
