Must Try Monday {Grilled Caprese Wrap}

Caprese…..the fresh mozzarella, tomatoes, hint of basil and some balsamic viniagrette.  That is seriously my favorite combination.  My first favorite way to eat it is on top of a Margherita pizza.  My next favorite way has to be this….Grilled Caprese Wraps.  I have seriously had one of these almost everyday this week for lunch.  It’s simple, indulgent {hello melted fresh mozz!}, and soooo very good.

Must Try Monday {Grilled Caprese Wrap}

1 small tomato, chopped
1 flour tortilla shell
1-2 Tablespoons of fresh mozzarella, diced
1-2 teaspoons of balsamic vinaigrette dressing


1.  Heat the electric skillet to about 350 degrees.  Drizzle it with a little bit of olive oil.
2.  Lay the tortilla flat on the skillet, and fill one side with the basil, mozzarella cheese, and tomatoes.  Drizzle some of the balsamic vinaigrette dressing over it.

3.  Gently fold the empty side of the tortilla over, so it’s in half.

4.  Cook for 5 minutes or so, or until the bottom browns and gets crispy.
5.  Gently flip the wrap over and cook the other side.
