First, I’m sorry for not having pictures on this recipe. Tonight, we’ll take some of these out of the freezer to bake for a snack, and I’ll take a few. In a few days, I’ll update the post with pictures. Yes, they are fabulous. Yes, it’s a family recipe. And, yes, I want to share it with you!
Peanut Butter Oatmeal Chocolate Chip Cookies
1 c shortening or butter
1 c packed brown sugar
1/2 c peanut butter
3/4 c white sugar
2 c flour
2 t baking soda
1/2 t salt
1 c oatmeal
1 c chocolate chips
*Beat sugars and shortening together until creamy.
*Add eggs and peanut butter. Mix well.
*Combine flour, baking soda, and salt. Add to cream mixture.
*Stir in oatmeal and chocolate chips. Since I’m using my mixer for everything else, I just set it on a very low speed to add the oatmeal and chocolate chips.
*Shape into 1 inch balls and place on a cookie sheet. Criss cross with a fork.
*Bake at 350 for 8-10 minutes.
My new thing with making cookies is freezing half of the dough in individual balls. I just line a cookie sheet with wax paper, place them on it, and stick it in the freezer. After they’re frozen, I transfer them to freezer bags. This way, I can just pull out a few when we want some for dessert or a snack, bake them, and serve them warm.
