In the summer, we love chicken salad. But, I don’t love the fat and calories that come from the mayonnaise in traditional chicken salad recipes. With this recipe, you can use a Low Fat Poppyseed Dressing, as well as a Lower Fat Shredded Mozzarella Cheese to make it “healthy”. I also love the cucumber alongside the grapes in this recipe. It’s great in a pita pocket or with crackers.
Poppyseed Chicken Salad
2 cups cooked, cubed chicken
1/2 c Poppyseed Dresssing
3/4 c Shredded Mozzarella Cheese
1 c chopped cucumber
1 1/2 c halved grapes
Place all the ingredients in a bowl and stir until the dressing coats it well. Serve in a pita pocket or alongside crackers.
