“Ritzy” Chicken

 Last Thursday, I left to take Matthew and Lucas to karate.  That meant that Derrick was home with Natalie, as well as on dinner making patrol.  I left him with defrosted chicken, and the suggestion that he coat them in something and make “homemade” chicken nuggets.  Here’s what he came up with:
 

Ritzy Chicken
8 skinless/boneless chicken breast tenders, cut in half
1/2 c flour
20-25 Ritz crackers, crushed
1/4 t garlic powder
1/4 t salt
1 egg, beaten

*Mix the flour, garlic powder, salt, and crushed crackers in a bowl.
*Dip the chicken in the beaten egg, and coat in the above dry mixture.
*Deep fry in a fryer for approximately 7 minutes.
*I had to deep fry the chicken in batches and separately from the french fries.  To keep it warm, I put it on a baking sheet in a 300 degree oven.  This also crisped it up nicely.

It is SO easy to make, and turns out super yummy.  The buttery ritz crackers add some salt and buttery flavor to the chicken.  We served it with honey mustard dressing to dip.  I know there has to be a healthier way, but sometimes fried food tastes so good.

As a side dish, we made homemade french fries in the deep fryer, too.

Homemade French Fries
4 medium size white russett potatoes
season salt

*Thinly slice the potatoes.  I start at the end and cut shortwise, so they are in the shape of circles.  They kind of look like raw potato chips.
*Deep fry the potatoes for about 8-10 minutes.  The longer you leave them in, the crispier they get.
*Drain on paper towels and sprinkle with season salt.

This is our favorite way to make chicken!  How do your kids like their chicken?
