Creamy Potato Chowder

Creamy Potato Chowder is a favorite comfort food in our house.  It is so easy, and comforting as we move into a busy season in our lives. You will want to add this to your menu rotation.  

Creamy Potato Chowder takes the typical potato soup to a more comforting level!  The ingredients are super easy, making this a fall comfort food that just takes a few minutes to throw together.

A good, hearty soup is one of my favorite meals in the winter, and even moving into spring.  We live in the Midwest, so it can still be chilly even in April!  Wrapping my hands around a warm, comforting bowl of soup makes me want to settle in for the night and just relax.  And let’s get real….soup can be made in the crock pot, which is a huge bonus! No fuss, set it and let it cook all day is my mantra.  If there isn’t at least one crock pot meal on our weekly menu, I need to sit down and rework it!  This Creamy Potato Chowder is SO easy, and the best part is, the ingredients are in my pantry nearly all the time.

Creamy Potato Chowder Ingredients:

  • One medium onion, chopped {about 1/3 cup of onion}
  • 8 cups diced potatoes {I leave the skin on}
  • 1 can Cream of Chicken Soup
  • 3 cans Chicken Broth
  • 1 package Cream Cheese
  • Cheese, Bacon, Sour cream, etc for toppings

How to Make Creamy Potato Chowder:

  • First, dice the potatoes and place them in the crock pot.  Add the onion, cream of chicken soup, and chicken broth.
  • Then, set it to cook on low for 8-10 hours.  
  • About one hour before the cooking is finished, add the cream cheese. Stir to incorporate it.  It will begin to cook into the soup.  Give it a stir every 15 minutes or so until your chowder gets to a creamy texture.

Serve topped with cheese, bacon, chives, etc. However you like!

Perfect Sides for Potato Chowder

If I am serving a chowder or soup for a meal, we have a few sides to make it a well rounded dinner.   Typically, I will serve the following:

Crusty Sourdough Bread from Wildgrain 

Green Salad with chopped Veggies and Shredded Cheese

Ingredients
