For the last 19 years or so, our family has invested in steer meat from a local farmer. We typically order a side of beef, which means we can have up to 500 pounds of beef in our freezer at one time! Not only are we supporting a local farmer, but it is one of the ways we can serve our family good food without breaking the bank. I cannot remember the last time I purchased ground beef, steaks, roasts, or any sort of red meat at the grocery store. It’s wonderful to have access to it anytime we want!

But, that also means getting creative and trying to use all the cuts of meat. I have no trouble cooking the steaks, roasts, and using the ground beef. However, cuts such as short ribs are something I struggled with, until now!

I have tried the short ribs in the InstaPot, on the smoker, and even grilling. I just could not get them to the texture or taste that my family loved. Once I started using the crockpot, it was magic! This BBQ Slow Cooker Short Ribs recipe has become my “go to” way of preparing them.

As a busy mom, I know how valuable it is to be organized, and have a “set it and forget it” dish on your menu plan! The key to this recipe is to really rub the spice mixture into the meat before you add it to the slow cooker. Coating the pieces of ribs thoroughly with the rub is key to the best flavor! To give them the ultimate flavor, coat them with the rub the night before, cover in plastic wrap, and marinate in the refrigerator overnight.

BBQ Slow Cooker Short Ribs Ingredients

  • 2-3 pounds beef short ribs {no need to remove the membrane before cooking}
  • 1 1/12 Tablespoons Paprika
  • 2 Tablespoons Light Brown Sugar
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups BBQ Sauce, divided

How to Make BBQ Slow Cooker Short Ribs

First, mix together the paprika, brown sugar, cayenne, salt, and pepper. Then, rub the spice mixture ALL over both sides of the ribs.

Next, place the ribs in a slow cooker, standing up against the sides if possible. You want the meaty side against the pot.

Add 1 cup of BBQ sauce, pouring over the ribs. Cover, and cook on LOW for 6-8 hours.

When the meat is finished, remove it from the slow cooker and place it on a cutting board. Set aside the bones, discard any excess fat, and remove the membrane. Then, shred the meat with forks.

BEFORE returning it to the slow cooker, drain most of the liquid from the slow cooker. Short ribs can be fatty, and produce a lot of liquid when cooking. If you prefer your meat a bit drier, you will want to discard most of the juices.

Return the shredded meat to the slow cooker, and add another 1/2 cup of BBQ sauce. Stir well to mix it in, and set on warm until ready to serve.

How to Serve BBQ Short Ribs

Serve on sandwiches, using a thick bread such as sourdough or French bread.

Serve atop mashed potatoes or macaroni and cheese.

They are also great alongside a salad and some crusty bread!
