Chocolate Chip Cookie Pizza Recipe
Chocolate Chip Cookie Pizza is one of our easy, “go to” birthday treats. I love making this, and it checks off all the boxes for the best, most delicious chocolate chip cookie pizza recipe!
Over the years, our kids have requested a store bought chocolate chip cookie pizza for a quick birthday treat. I often indulge them, by picking one up at the store to compliment that evening’s birthday dinner at home. They bring back fond memories of my husband and I when we were high school sweethearts ~ a chocolate chip cookie heart was part of our first Valentine’s Day celebration!
While the store bought versions are okay in a pinch, I do love to make my own chocolate chip cookie pizza at home. It is SO easy, and if you can get just the right recipe, it ends up being a soft, chewy, delicious version of the classic Chocolate Chip cookie recipe.
Chocolate Chip Cookie Pizza Ingredients:
2 cups all purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, softened
3/4 cup packed brown sugar
1/4 cup white sugar
1 egg
2 teaspoons vanilla extract
1 1/4 cups chocolate chips {we used an entire bag of mini chocolate chips for this recipe….the more the better!}
How to Make a Chocolate Chip Cookie Pizza:
First, preheat your oven to 350 degrees, and lightly spray a round baking dish or pizza pan. Set aside.
In a mixing bowl, with your mixer fitted with the paddle attachment, cream the butter and sugars until smooth. Add the egg and vanilla extract, beating until everything is well combined.
In a large measuring cup, measure the dry ingredients and gently stir them together. Next, add these to the creamy mixture in the bowl and beat on low until everything is well combined. Finally, add the chocolate chips and stir gently.
At this point, the cookie dough will be thick and very soft. Add the cookie dough to your prepared pan, and flatten evenly, until the edges reach the sides.
Bake your chocolate chip cookie pizza for 20-25 minutes, or until the top is just golden brown and a little puffy. Allow it to cool on a wire rack, inside the pan, before slicing and serving.
Tips for a REALLY Good Chocolate Chip Cookie Pizza:
Use a pizza pan or a round baking dish with sides. It does not have to be a “deep dish” pan, but you definitely want sides. I learned the hard way that a flat pizza stone was NOT the right tool to use. I had cookie dough all over the inside of my oven.
This will store in an airtight container for 2-3 days on the counter. Or, you can refrigerate it for up to 5 days.
Warm in the microwave for a few seconds before serving with a glass of cold milk.
To make a birthday version, add some sprinkles to the dough before baking.
