Cinnamon Roll Coffee Cake

Today, I’m sharing this delicious Cinnamon Roll Coffee Cake recipe that will be perfect for Christmas morning!  I originally served it at a shower that we hosted, and it was a hit! Since we hosted a brunch for the shower, I went straight to my Breakfast Foods Pinboard, knowing I’d find something fab.  I sure did!

Cinnamon Roll Coffee Cake {from Rumbly in My Tumbly}


3 cups flour

1/4 teaspoon salt

1 cup sugar

4 teaspoons baking powder

1 1/2 cup milk

2 eggs

2 teaspoons vanilla

1/2 cup melted butter


1 cup softened butter

1 cup brown sugar

2 Tablespoons flour

1 Tablespoon cinnamon


1.  In a stand mixer, fitted with the paddle attachment, mix the first seven ingredients together.

2.  When they are well combined, slowly add the melted butter.  Mix until you have a nice cake like batter.

3.  Pour the batter into a greased 9×13 pan.

4.  Mix the topping ingredients together, and drop by spoonfuls evenly across the top of the batter.  Swirl it evenly with a knife.

5.  Bake at 350 for 30 minutes, or until a toothpick inserted in the center comes out clean.

6.  Allow the cake to cool a bit.  For a glaze, you can use store bought vanilla frosting.  Or, mix up your own.  Combine 5 tablespoons milk, 2 cups powdered sugar, and 1 teaspoon vanilla.  Warm in the microwave for about 30 seconds, and pour over the Cinnamon Roll Coffee Cake.

Yum right?  If you love all things cinnamon and sugar, then this will be a dessert {or breakfast} that you and your family will enjoy!  I’m thinking it will be great for Thanksgiving or Christmas morning.  We LOVE the cinnamon/sugar combination for breakfast in our house!  Enjoy!
