Easy Haystack Cookies
Haystack Cookies are so easy and delicious! These cute little cookies can be sprinkled with holiday colors, kept on hand for lazy summer pool days, or even included in a themed dinner night! They’re not fancy, a little messy to make, but so good and easy!
We like a good theme in our house! Every week, when we host our small group Bible Study, we have a food theme. When the theme “noodles” was suggested, I decided I needed a dessert that incorporated noodles. Haystack Cookies are perfect for this! They use Chow Mein Noodles! These little cookies are crunchy, salty, sweet, and make a fun and unique dessert!
I am often looking for an easy, small ingredient list, but big on taste or presentation recipe. Traditional No Bake Cookies are often my go to for an easy no bake dessert. What I love about Haystack Cookies is that you can add some festive fun to them, to match a holiday! Or, just leave them all chocolately, and that is okay, too!
This recipe is great to involve kids in the kitchen, and you do not have to worry about them using the stove or oven. The chocolate is melted slowly in the microwave, and then you simply fold in the noodles and peanuts and it’s done!
Haystack Cookie Ingredients:
- 12 ounce bag of Chocolate Chips
- 12 ounce bag of Butterscotch Chips
- 1 cup peanuts
- 4 cups Chow Mein Noodles
How to Make Haystack Cookies:
- Line two cookie sheets with wax or parchment paper and set aside.
- Then, add the chocolate chips and butterscotch chips to a large microwave safe bowl. Microwave in 15 second increments, stirring after each one. Mine only took 3 times in the microwave until they were stirred and smooth.
- Stir the chips to combine until they are smooth. Add the Chow Mein Noodles, and gently fold them into the chocolate. Fold in the peanuts.
- Finally, drop them by spoonfuls onto the prepared sheets. Place the sheets of cookies in the refrigerator for 15-20 minutes, or until they are set. After they are set, you can store them at room temperature in an airtight container.
Tips for Great Haystack Cookies:
- Use your favorite chocolate! This recipes allows for some variety. I used Milk Chocolate chips, but dark or semi sweet would be great, too!
- Replace the Butterscotch chips with peanut butter chips. Or, for a holiday taste, add peppermint chips.
- These can easily be made in advance and frozen. They can be stored on the counter in an airtight container, or in the refrigerator if you want them to last a little longer.
- Add holiday sprinkles, colored sprinkles, or a drizzle of white chocolate.
