Easy Instant Pot Egg Bites

Breakfast can be quick and easy with a little meal prep ahead of time. While the Starbucks sous vide egg bites are fluffy and delicious, you can easily make some at home to have on hand for busy mornings! We love these because we can customize them to meet everyone’s taste and favorite flavors!
By baking up some egg bites at home, you can save some money and time! Plus, they are a budget friendly breakfast option and a healthy start to the day. These are our “go to” breakfast because they are so easy, full of protein, and a “grab and go” option. And, they are so quick!
My sweet husband treated me to a fun Instant Pot accessory kit for my birthday. I have always wanted to make something using these fun tools, and these egg bites were the first thing I made with the mold!
Ingredients for Instant Pot Egg Bites:
To make these egg bites, you just need a few ingredients, and you likely have them on hand!
- Eggs
- Shredded Cheese: You can do so much with different flavors! We prefer sharp cheddar, but I’d also like to try a Pepper Jack or a creamier Gruyere cheese.
- Vegetables: We added chopped red peppers and onions. Green onions and spinach could make a nice flavor as well!
- Meat: Bacon is our “go to”, and ham cubes are super convenient! I think ground sausage would be delicious as well.
Helpful Tips for Making Egg Bites:
- You CAN use egg whites with this. You would need about 2 1/4 cups of egg whites whisked with an actual whisk, not a fork.
- Dice, chop, or finely grate your add ins. The egg bites are small, so keep your fillings small as well.
- Be sure to grease your silicone mold between each batch. They will stick if you do not grease it well.
- Add some salt and pepper to taste before you eat them.
- These can be frozen or refrigerated. Just wrap them in a paper towel and reheat for 30 seconds.
- Use a small silicone spatula to gently remove the egg bites from the mold after cooking.
- I used milk for a creamier texture. You can substitute the milk for water if necessary.
How to Make Instant Pot Egg Bites:
First, cook any meats you are using, chop finely, and set aside. Also, chop your peppers and onions and set aside.
Add 1 cup water to your Instant Pot and place the trivet in the bottom. Spray the silicone egg mold and set aside.
Next, mix up your eggs. Add the eggs, milk or water, and baking powder to a 4 cup measuring cup {with a pour spout is ideal}. Whisk together until well combined.
Add your meat and cheeses to your prepared egg molds, and pour the prepared egg mixture on top to fill the molds. Fill them about 3/4 full. Cover the mold with the silicone lid, and place it gently on the trivet in your Instant Pot. If you have two molds, you can fill those as well and stack one on top of the other. Make sure the holes are not directly on top of each other.
Close the lid and lock it. Set it to cook on Pressure Cook {high} for 8 minutes. Allow the pressure to naturally release, and carefully remove the egg bite molds from the Instant Pot.
Remove the lid, and allow them to set about 5 minutes before removing from the mold.
This recipe will make two batches of egg bites! They will be a delicious, easy way to give your family a healthy breakfast!

- 1/2 teaspoon baking powder
