Easy No Bake Cookies
Who doesn’t love a chewy, chocolatey, no bake cookie? These easy, addicting, and classic cookies will become a family favorite in absolutely no time! These Chocolate Peanut Butter No Bake Cookies won’t last long, I promise!
Chocolate and Peanut Butter is my absolute favorite flavor combination. And I don’t know about you, but the easier the cookie, the better! I don’t despise baking, but sometimes I just need a quick, sweet treat! Growing up, we would make a trip once or twice a summer to my great-grandma’s house. She always had chocolate no-bakes in a ceramic cookie jar that was shaped like a conestoga wagon. Funny the things you remember, isn’t it? These cookies take me right back to her small kitchen, and remind me that making sweet things for my family doesn’t have to be complicated!
This recipe requires VERY few ingredients, most of which you likely have at home already! Plus, you don’t need to heat up the oven to make these. They are BEST chilled, or frozen. So be sure to put them in the refrigerator to store them. Note…..store them in the refrigerator AFTER they have cooled completely. Otherwise, they will get mushy and stick together.
Chocolate Peanut Butter No Bake Cookies are so addicting….and make just the right sweet treat for a weeknight dinner. I think you could even make them gluten free if you used gluten free oats. What d you think?
Ingredients for Chocolate Peanut Butter No Bake Cookies:
1 stick of butter
2 cups sugar
1/2 cup milk
1/4 cup cocoa powder
1 cup peanut butter
2 teaspoons vanilla
3 cups quick cook oats
1/4 teaspoon salt
How to Make Chocolate Peanut Butter No Bake Cookies:
In a large bowl, stir together the oats and salt. Line a baking sheet with wax paper. Set both of these aside.
Next, in a small saucepan over medium/high heat, add the butter, milk, sugar, and cocoa. Whisk together. Bring this mixture to a boil for about a minute, and then remove it from the heat.
Whisk in the peanut butter and vanilla. Whisk until smooth and combined.
Pour the chocolate/peanut butter mixture over the oats in the large bowl. Stir well, until it is well combined and all the oats are covered.
Drop the cookie mixture onto the wax paper using an ice cream or a cookie scoop. Allow these to cool on the countertop. Once they have cooled, store them in an airtight container in the refrigerator.
**You can also freeze these cookies.
Your family will not be sad if you make these cookies over, and over, and over, and over……And, if it is anything like my house, they don’t last long! They are a perfectly sized sweet treat! They are almost too easy to make, and an easy way to get your kids involved in the kitchen! This will be one of the easiest cookies you ever make!
A Few Tips for Making Perfect No Bake Cookies:
You’ll likely need two baking sheets for them to set up. So have those ready. You’ll see that as you get into the process of scooping the cookies onto the sheets, they start to slowly set up. Be prepared!
These freeze well, in an air tight container. Be sure to thaw them just a bit before eating them.
Boiling the milk/sugar/chocolate mixture for a good minute is KEY. If it does not fully boil, your cookies won’t set up very well.
Using crunchy peanut butter, or mixing in chopped pretzels are great ideas!
If your kitchen is warm, you can put them in the refrigerator to set up.
These cookies are so simple to throw together when you need a quick treat, or something to take to a party. They are SO kid friendly, and everyone loves them!
