Zucchini? Salsa? Yep! You read that right. Our garden has been literally overflowing with zucchini, cucumbers, tomatoes, and peppers. All the perfect ingredients for salsa, right? That’s mainly why we planted those vegetables-so I could make fresh salsa. After my mom brought some with zucchini in it to our family pizza night, I decided it was worth a try. The zucchini gives it some great color, and fills it in a bit. So good! Plus, we serve it with the BEST chips ever-On the Border Tortilla Chips!
Fresh Garden Tomato and Zucchini Salsa
1 medium size zucchini
1 large bell pepper
1 16 oz can of tomatoes, or about 4-5 fresh ones
1 cup Italian dressing
1-2 small jalapenos, depending on your desired “heat’
1 16 oz can of black beans, rinsed and drained
Bag of frozen corn
Directions:
Dice all the vegetables. Add them to a bowl. Add the black beans and dressing. Stir until everything is coated well. Place in the refrigerator until ready to serve. It’s best if you let it chill in the fridge a few hours before serving. Serve alongside your favorite tortilla chips!
I never thought I would like zucchini unless it was in Zucchini Bread {which I have yet to share that recipe….I’ll do it soon :)} But now we’ve had it in salsa, our Zucchini Pizza Bites, on the grill, baked in the oven like chips, and in a vegetable saute with dinner. How do you eat zucchini?
