Gingerbread Cake Bars
Gingerbread…just the sound of that word and I’m in the Christmas spirit. It is so yummy, and is a perfect transition from fall into the Christmas season. As cute as gingerbread men are, I think they are time consuming to make, so I prefer these Gingerbread Cake Bars. The flavor, aroma, and a dusting of powdered sugar make them fantastically amazing for the holiday season.
Gingerbread Cake Bars Ingredients:
1/2 cup butter, melted
3/4 cup granulated sugar
1/4 cup brown sugar, packed
1/2 teaspoon vanilla extract
1/3 cup molasses
1 egg
2 teaspoons baking soda
2 cups all-purpose flour
1 Tablespoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
Directions:
Set the oven the 350 degrees, and spray a 9×13 baking dish with cooking spray. Set aside.
In your stand mixer, with the paddle attachment, beat the butter, sugar, brown sugar, vanilla, and molasses on medium speed until well blended.
Lower the speed a bit and add the egg, mixing until completely incorporated.
Add the baking soda, spices, flour, and salt. Mix well to combine.
Spoon the mixture into your baking sheet. It will be thick, but that’s okay! I used a piece of wax paper sprayed with cooking spray to push the cookie bar mixture around and spread it in the dish.
Bake for 15-20 minutes. Cool on a wire rack. When they are fully cooled, dust them with a sprinkle of powdered sugar.
