Mini Deep Dish Ice Cream Cookie Cups
Ice cream, cookies, you know….two of my all time favorite things! What better way to celebrate warmer weather and the ease of moving into sunny days than with a sweet treat? I don’t know about you, but my children are spoiled. Every night they have ice cream before bed as their night time snack. Spoiled kids!
My husband grew up with this tradition, and when we were dating, I thought he was one lucky guy because his mom let them have ice cream nightly. Now, we have the same nightly snack in our house. Sometimes, we like to make it fun, like with these Mini Deep Dish Ice Cream Cookie Cups. I hope these make it into your warm weather snack line up!
Ingredients for Deep Dish Mini Ice Cream cookie cups
1 cup sugar
1 cup brown sugar, packed
2/3 cup butter, room temperature
2/3 cup shortening
2 eggs
2 teaspoons vanilla
3 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt

How to Make Mini Deep Dish Ice Cream Cookie Cups
First, in your stand mixer, fitted with the paddle attachment, beat the sugar, brown sugar, butter, shortening, eggs, and vanilla until creamy.
Second, add the flour, baking soda, and salt, slowly until well mixed.
Third, scoop by rounded spoon full {I used a traditional ice cream scoop} into 12 greased muffin cups.
Fourth, bake for 10-15 minutes, or until the edges are golden brown.
Fifth, as soon as you remove them from the oven, use a small container to gently press down the insides so they form a cup. Put them back in the oven for 2-3 minutes after making the hole.
Sixth, cool in the muffin tin for about 10 minutes, and then gently run a knife around the edges and scoop them out of the muffin tin to cool completely on a wire rack.
After you have assembled them you can add fun toppings! This is the part our family loves! Topping them with fun flavors! I used Blue Bunny® Bunny Snacks. These are SO yummy, and make a great topping! While your cookie crusts are baking, chop up some of the little snacks to top your ice cream. Be sure to put them in the freezer so they don’t melt after you chop them.
After your deep dish cookie crusts have cooled, fill them with a scoop of ice cream. Any flavor will work, but we kept it basic with vanilla. Next, add some of the chopped up Bunny Snacks to them for a topping, and you are all set! Yummy sweet treat, right?
This recipe is easy, and I always have the ingredients for Chocolate Chip Cookies on hand. I love the flavors of a basic Chocolate Chip Cookie recipe, but I chose to omit the chips for this one. By doing so, the the flavors of the toppings really shine through!
