One Pan Crispy Garlic Chicken with Asparagus
Crispy Garlic Chicken with Asparagus is one of those easy, one pan dinners that you can make in thirty minutes! It is perfect for a busy weeknight dinner, or when you don’t feel like firing up the grill! This tasty dish has quickly become a family favorite, and makes it onto our dinner rotation about once a month.
Chicken is one of those foods that is so versatile. You can make it over and over, and create something different nearly every time! I love my chicken extra crispy, and this dish achieves just that! Plus, anytime I can make a meal in one pot, without heating up the oven, it’s a total win! I plan our menu for almost the entire month. I know, that seems a little excessive, but it doesn’t take long, and I feel so much better when it’s done!
I try to work chicken into our menu on a weekly basis. Especially when the weather turns, and we aren’t excited about standing out in the cold to grill. Even so, grilled chicken is not my favorite food from the grill…I like it crispy and coated! What’s even better is when I have all the ingredients on hand, and I can have this on the table ASAP!
Ingredients for One Pan Crispy Garlic Chicken & Asparagus
3 Boneless Skinless Chicken Breasts, or 6-8 Boneless Skinless Chicken Tenders
6 T Butter
1/2 cup Italian Bread Crumbs
1/2 cup grated Parmesan Cheese
1 t garlic powder
1/4 cup flour
For the Asparagus:
2 T Butter
1 Bunch Asparagus, cut into thirds
2 garlic cloves, minced
1 T parmesan cheese
How to Make One Pan Crispy Garlic Chicken
First, melt 2 T of butter in a large pan over medium heat. While this is melting, combine the bread crumbs, flour, parmesan, and garlic flour in a shallow bowl. Melt the remaining 4 T of butter in a separate bowl.
Dip the chicken in the butter, then into the crumb/flour mixture. Add this to the melted butter in the pan. Cook on each side 3-4 minutes or until crispy. Repeat this, setting the chicken aside on a plate as it finishes cooking.
After all your chicken is cooked, melt 2 T butter in the same pan. You will have bits of chicken coating in the pan, and that is the GOOD stuff! Saute that, with the butter and the garlic cloves for a few minutes. Then, add the asparagus and cook until tender.
When your asparagus is tender, add a Tablespoon of parmesan cheese, and add the chicken back on top. Serve immediately.
