Peanut Butter Chocolate Energy Bites
If you have been a reader of My Favorite Finds long enough, you know that I have an obsession with the peanut butter and chocolate combination. Any chance I get to eat these two decadent flavors together, and I am a happy girl. But, as we all know, that isn’t always the healthiest option….I mean, I can’t just eat a bag of Reese’s Peanut Butter Cups and feel good about it. I can’t even eat just two or three of those little guys and feel good about it. But, I can eat Peanut Butter Chocolate Energy Bites and feel good about it! These Peanut Butter Chocolate Energy Bites satisfy my craving for my favorite combination, they have protein in them, and I don’t feel guilty after eating one…or two….I often have these in the freezer and/or refrigerator, and my whole family loves them!
Peanut Butter Chocolate Energy Bites
1 cup Oats {I used Old-Fashioned Oats}
3/4 cup peanut butter
1/2 cup honey
1/4 cup chocolate protein powder
1 1/4 teaspoons vanilla extract
1/2 cup chocolate chips
In a large bowl, combine all the ingredients together. Stir them with a large spatula or wooden spoon. Stir until they are well incorporated. Roll into 1 inch balls, and place on a cookie sheet lined with wax paper. Allow to sit in the refrigerator for 30 minutes to an hour. Place in an airtight container, with wax paper between the layers. You can also freeze them.
These are seriously so easy and delicious. I love eating them after a workout, or popping one in my mouth after a meal for a sweet treat. Bonus, my kids LOVE them, and I don’t feel bad about letting them eat them!
