Peanut Butter Rolo Stuffed Cookies

Did you know you can win a HUGE assortment of HERSHEY’s candy? Any look at my Pinterest boards, and you know that I have a slight addiction to the peanut butter/chocolate combination. Then, you go to the Desserts page here on My Favorite Finds, and it’s confirmed. My go to dessert combination is peanut butter and chocolate. When Easter comes around, I am all over those REESE’s Easter Eggs. Anybody else? I LOVE them….even more so than regular Reese’s Cups. Why? I don’t know.
But there is something just different about them! Well, when this huge box of Easter candy from HERSHEY’s showed up on my porch last week, I knew that I would need to start baking. I mean, otherwise, we’d just eat it out of the bags, and I probably wouldn’t save any for the kids’ Easter baskets! I searched and searched for a Rolo recipe, and I found it on Six Sister’s Stuff. Have you visited their site? Seriously, some of the BEST recipes ever! I had not tried their Peanut Butter Cookie recipe until now, and I am totally hooked! It’s much better than mine! Stuff these peanut butter cookies with ROLOS, and you have an amazing dessert to share at Easter, or after Easter when you have candy laying around!
Peanut Butter Rolo Stuffed Cookies {from Six Sister’s Stuff}
2 sticks butter softened
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 1/2 cups peanut butter
3 cups all purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
1 8.5 ounce bag ROLOS
Directions:
1. Heat the oven to 350 degrees. In a stand mixer, fitted with the paddle attachment, beat the butter, sugar, brown sugar, and peanut butter until creamy.
2. Add the eggs, flour, baking soda, and vanilla extract. Beat for a few minutes until everything is well combined.
3. Using a Tablespoon, roll the dough into Tablespoon size balls. Cut the ball in half with a serrated knife. Place a Rolo in the center of the half, and build up the sides around it. Add the top half of the ball, to cover the Rolo. Press the sides together to seal it.
4. Lay the Rolo stuffed cookie ball onto the baking sheet. Gently press a crisscross in the top of the cookie using a fork.
5. Bake at 350 for 10 minutes. This is VERY important-allow these to cool almost completely before removing from the cookie sheet. Otherwise, they are so soft they will break apart and lose their shape.
These are SO good. We all devoured them! I didn’t quite have enough ROLOS to make the entire batch of dough, so I stirred in some chocolate chips and baked them as Peanut Butter and Chocolate Chip cookies. Yum!!
