Peanut Butter Rolo Stuffed Cookies
Peanut Butter Rolo Stuffed Cookies will be your new favorite sweet treat! These soft, chewy cookies with a yummy caramel center are one of my favorites!
ROLOS are one of those candies that are okay-I don’t love them. But, we seem to have an abundance of them around after an Easter holiday. They do fit perfectly in Easter eggs, don’t they? They also are the star of the show in these peanut butter cookies! I am excited to share these with you today!
Ingredients for Peanut Butter ROLO Stuffed Cookies
- 2 sticks butter softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1 1/2 cups peanut butter
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 8.5 ounce bag ROLOS
How to Make Peanut Butter ROLO Stuffed Cookies
First, heat the oven to 350 degrees. Â In a stand mixer, fitted with the paddle attachment, beat the butter, sugar, brown sugar, and peanut butter until creamy.
Next, add the eggs, flour, baking soda, and vanilla extract. Â Beat for a few minutes until everything is well combined.
Using a Tablespoon, roll the dough into Tablespoon size balls. Â Cut the ball in half with a serrated knife. Â Place a Rolo in the center of the half, and build up the sides around it. Â Add the top half of the ball, to cover the Rolo. Â Press the sides together to seal it.
Then, lay the Rolo stuffed cookie ball onto the baking sheet. Gently press a crisscross in the top of the cookie using a fork.
Bake at 350 for 10 minutes. Â This is VERY important-allow these to cool almost completely before removing from the cookie sheet. Otherwise, they are so soft they will break apart and lose their shape.
These are SO good. We all devoured them! I didn’t quite have enough ROLOS to make the entire batch of dough, so I stirred in some chocolate chips and baked them as Peanut Butter and Chocolate Chip cookies. Yum!!
