Taco Stuffed Peppers

Tacos….I just love them.  They are seriously one of my favorite foods, right next to pizza.  But, they can be so unhealthy for you, right?  However, I decided with a little bit of pre planning, and thought, I could create a nice alternative to the classic taco dish, and not feel so bad about eating it!  These Taco Stuffed Peppers are AMAZING, and not so bad for you!

Taco Stuffed Peppers

It is the beginning of a new year, and this is when I like to create new recipes and work in some different meals into our meal plan-yes! I am actually back to meal planning after almost a 9 month hiatus :).   But hey, I am thinking that I am the only one who noticed…..but my goal is to keep with it because it makes life SO much easier!

This starts with plump, crunchy bell peppers.  I like the red and orange ones, but any color will work!  Then you mix up some ground turkey, some basic spices, and before you know it, you have an amazing filling perfect to satisfy your craving for Mexican food, but without so much guilt.  

Ingredients:

1 pound ground turkey {of course you can use lean ground beef}

1 can black beans, rinsed and drained

1 1/2 cups salsa

1 1/2 cups brown rice, cooked

1 teaspoon of each-chili powder, garlic powder, and cumin

Cilantro, chopped

6 Bell Peppers

Directions:

Preheat the oven to 350 degrees.  Lightly spray a baking dish with cooking spray, and set aside.

In a large skillet, combine the ground turkey and spices.  Cook until the turkey is browned and crumbly.  

Keeping over low heat, add the salsa, rice, some of the cilantro, and black beans to the turkey.  Simmer for 5-7 minutes, stirring occasionally.  Remove from heat.

Cut the bell peppers in half, and clean out the seeds.  Add the stuffing to each pepper, and lay open side up in the baking dish.  Bake for 30 minutes. During the last 5 minutes or so of baking, add some shredded cheese and melt on top of the peppers.  

Garnish with sour cream, additional cilantro, and salsa.

Amazing!!!  The filling makes plenty, so you can easily freeze it or use it for leftovers.  This dish makes it easy to eat familiar foods in a healthy way. I struggle with some of the low carb, or “good for you” versions of meals because they call for ingredients either that I don’t have on hand, or that I don’t care for.  Not this one!  These Taco Stuffed Peppers will be making their way into our meal rotation again!
