Easy Zucchini Pizza Bites

Zucchini is our favorite plant to grow in our garden! Every summer, we have a huge crop {considering we only plant two zucchini plants} that provide us with SO many zucchinis. Sharing with friends, freezing some for zucchini bread during the fall and winter, and adding it to our dinner table is so easy when we have a lot of it!  These Easy Zucchini Pizza Bites are my new “go to” for lunches!  So good, and healthy!  

Easy Pizza Zucchini Bites

I am so excited to share with you my Easy Pizza Zucchini Bites.  We have a HUGE crop of zucchini from our little backyard suburban garden.  For us, bringing in 3-4 zucchini a day is a lot!  And, I’ve shredded and frozen 10 bags of it!  Lots of zucchini bread coming our way this fall and winter!  But, my husband and I also like to eat it “fresh”.  We add it to a foil packet with some onions and peppers to grill up for a side dish. We grill it straight on the grill and top it with some parmesan cheese. And I recently found a potato soup recipe that calls for zucchini!  I really want to try that!

So, I’ve been exploring new ways to make it with good results! I could eat pizza several times a week.  But, all the carbs and processed ingredients are SO not good for me! While we have the fresh zucchini, I like to make Easy Pizza Zucchini Bites for a quick lunch.  I add a few extra fresh veggies as a side, and I have a yummy lunch that is so quick and simple!

Zucchini can be watery. Before baking with it, I make sure to dry it out a little bit.  To do so, I may slice it in discs and bake it for about 7 minutes or so before topping it in this recipe.  When it is shredded, I place it in a colander, and blot it with paper towels.  I have even put a dish towel in the colander and THEN put the shredded zucchini in it. From here, I’ll wrap it in the towel and literally wring it out in the sink.

Ingredients for Easy Zucchini Pizza Bites:

1 medium size zucchini, sliced into circles

Pizza sauce, cheese, pepperoni, other toppings

Extra Virgin Olive Oil

How to Make Zucchini Pizza Bites: 

First, heat your oven to 450 degrees.  While this is warming, slice your zucchini, making sure the slices aren’t too thin.  If so, they won’t stand up to the toppings while baking.

Arrange the zucchini slices on a baking sheet.  Bruch them lightly with olive oil. Bake them in the oven for 5-7 minutes.

Remove them from the oven, and flip them over.  Spoon a little sauce on each one, and add some cheese and pepperoni. 

Place them back in the oven, and bake them for another 10 minutes or so.  

These make a GREAT and easy lunch.  Also, they would make a fun appetizer or movie night snack for your family.   As we make our way through summer and march toward school, easy recipes are always a  must for me. I love slicing up some fresh veggies to serve on the side with these.  Plus, I can cure my pizza craving in a healthier way, while my kiddos enjoy their french bread pizzas!  We all win!

Easy Zucchini Pizza Bites

In just a few minutes, you can have tasty pizza bites in a "better for you" version!

Ingredients

  • 1 large zucchini, sliced into round slices
  • Pizza Sauce
  • Pepperoni
  • Shredded Cheese
  • Olive Oil

Instructions

First, heat your oven to 450 degrees.  While this is warming, slice your zucchini, making sure the slices aren't too thin.  If so, they won't stand up to the toppings while baking.

Arrange the zucchini slices on a baking sheet.  Brush them lightly with olive oil. Bake them in the oven for 5-7 minutes. While these are baking, slice your pepperonis in halves or quarters.

After 5-7 minutes, remove them from the oven and flip them over. Add the sauce, pepperoni, cheeses, etc. Return to the oven and bake until the cheese melts, about 10 minutes.

Enjoy with your favorite sides or as a fun snack!

Notes

After slicing, blot the zucchini slices with a paper towel to pick up any excess water. Keep the olive oil VERY light as you brush it on before baking.

  1. Sounds delicious! I love zucchini! A lot of times I just slice (or rough dice) them along with a huge Vidalia onion and saute them in a little olive oil until tender and crispy brown. I could eat the entire pan. Looking forward to trying your recipe!

  3. These look so good and I have some zucchini that I need to use up too, which is perfect. I’m a bit confused though. Does the recipe card perhaps not have the full instructions listed? It doesn’t have the bit that talks about adding the toppings etc.
